Farm of Ideas is an organic, no-till operation, dedicated to pushing the boundaries of sustainable agriculture. Alongside providing produce to all the restaurants within the Relæ Community, it hopes to spur dialogue among chefs and farmers that will lead to meaningful changes for the world’s food systems. Farm of Ideas is a place where gastronomy, agriculture, the city and the countryside can meet; for this is where the magic happens.

First established in Lejre in 2016 by Christian F. Puglisi, the farm relocated and joined the pioneers in organic agriculture at Svanholm in 2019. This move hopes to bring about the opportunity to develop a Farm Lab and space for chef education, food research and gastro events.

But this partnership goes deeper than infrastructure; Svanholm and Farm of Ideas share the same values and visions, choosing to work in the field to inspire others to produce better organic raw produce. By working together, they can ensure that the message reaches further than ever.

Every morning a team of chefs drive from Nørrebro to the farm and harvest vegetables and collect milk from the cows. They bring it back to the kitchens of Relæ, Manfreds, BÆST, Mirabelle Restaurant and Mirabelle Bakery - where they become beautiful fresh dishes for the restaurant guests to enjoy that same day.
